You know when you eat (or drink)  something and you lovingly daydream about it? Something so delicious that it lingers on your mind longer than on your tongue?

This spiced peanut butter cafe latte is that.

I made this the week in between Christmas and New Years, and it was truly a gift to myself; and now I’m giving this gift to you.

  • Cafe Latte 101

I love coffee. I drink it everyday. Without it the world around me would suffer. These are facts I have come to accept but there are ways to consume cafe latte beverages that make them healthier and easy for your body to manage.

Let’s discuss.

  • Hydrate

If you drink this peanut butter cafe latte first thing in the am without first drinking water, you are dehydrating your body; so if you desire to look fresh and dewy, you must hydrate.

Every morning before I have one sip of java, I drink about 750 mls of water- actually it’s more like chug because as you know I don’t love water. Why? Because coffee- including this peanut butter cafe latte – is a diuretic, which means it flushes you out; and this isn’t a bad thing, it just means you need to stay hydrated. Enjoy your life and this peanut butter latte, but sip some water first. Being thirsty (in any manner) is NOT the vibe.

  • Spice Up Your Life

I’m that woman that shows up to places with her own coffee boosters- no sh*t- and I have no shame. But why? Spice add so much value to the taste of this spicy peanut butter latte, but also, health benefits.

NOTE: I will never add anything to a recipe just for health- sorry not sorry- because I will not sacrifice a delicious meal or snack to health. Good news is, we don’t have to 😉

I digress.

Coffee gives you energy because it releases enzymes that release stored sugars in our bodies, if we use this energy, great; if not, this can wreak havoc on the hormonal system, giving rise to issues you might not have known you had. SO by adding cinnamon we naturally balance our blood sugar. It’s a very small things but it can bear big benefits to how you feel when you drink coffee, and hopefully, this peanut butter latte.

  • Vanilla

Vanilla is HANDS DOWN my favourite sweet seasoning, so much so that it deserves its own bullet point. Vanilla is like the salt of the saccharine world, and it elevates this peanut butter latte to the GAWDS. My advice, don’t sleep on the vanilla in this peanut butter latte recipe, and every latte you make henceforth- just don’t.

OK so you might be wondering how to create delicious, foamy milk without a big time espresso machine, so I’m going to give you three options.

  • NESCAFE Milk Frother

This thing is AMAZING. Add milk, and seasoning, walk away, return and voila, frothy latte milk. I’ve yet to meet anyone who regretted this purchase.

  • Hand Frother

These are great in a bind BUT I’ve had four in about 2 years, because they can be flimsy and struggle when used heavily. That said, they are super affordable, so replacing every six months isn’t a tough pill to swallow.

  • Blender

Yup, your blender will work in a jam. Just add all the ingredients to blender and let the blender do what it do.

Enough of the small talk…the recipe

Cinnamon Spiced Peanut Butter Cafe Latte

  • 1 ½ tbsp peanut butter

  • 1 tbsp cinnamon

  • 2 tsp maple syrup

  • 1 ½ cups coconut milk

  • 2 tsp vanilla

  • ½ cup strong brewed coffee OR 1 shot of espresso

In a blender or milk frother, combine all ingredients, except coffee and froth; pour over coffee or espresso and enjoy!

NOTE: allergic to peanuts? Use any nut butter as a substitute- think almond butter, hazelnut butter and the like.
