As a chef I have had a love hate/relationship with tofu recipes, due in large part to some disgusting ( in my opinion) tofu meals. Nonetheless, tofu and I have mended our relationship and the results of this union have been FULLY DELICIOUS, and something to be shared.
Tofu Recipe Done Right: Asian Style Tofu Pockets
These tofu pockets have been the surprise of the season for me. I didn’t even know they existed until my client bought them and requested them for dinner; but after a few quick Google’s, I was ready to get stuck in.
The best thing about these tofu pockets is that they can be filled with ANYTHING you like, to create all kinds of savoury and sweet tofu recipes. To name a few, you can stuff these pockets and fry them, you can make this recipe (wink wink) or you can get crazy and stuff your pockets sweet- let your mind wander!
I stuffed mine SAVOURY with seasoned rice, which is made by adding RICE VINEGAR, SUGAR and SALT to rice cooking liquid; and then I added CHAR SUI (chinese bbq pork) shredded CARROTS, DIAKON radish, SCALLIONS and LEMONGRASS, with a sprinkle of soy sauce and fish sauce.
There aren’t really measurements to this recipe because you can stuff as many or as little as you like; instead my suggestion is to make a filling, LOTS OF IT, and whatever doesn’t get used, freeze for your next pocket making session.
