I love shrimp- grilled shrimp even more. As a child, when we had shrimp or crab I knew it was a special occasion. As an adult grilled shrimp still feels special, even if I have it twice a week.
This dish is next level because of my favourite seasoning, Cool Running All Purpose Seasoning, it’s soooo good and makes everything taste amazing. I have attempted to crack the recipe code, but honestly, I’ve more pressing things to do than reinvent the wheel!
This grilled shrimp is seasoned with Cool Running’s and garnished with a gut loving salsa, that features sauerkraut- but hidden, so people who *think* they don’t like it, will have no idea.
Delicious trickery, that your tastebuds and belly will love!
Grilled Shrimp with Gut Loving Salsa
- 1 lb shrimp, peeled and deveined (16/20 count)
- 2 roma tomatoes, diced
- 1 shallot, minced
- 1 tbsp pickled jalapenos, diced
- 2 tbsp cilantro, chopped
- Juice of ½ lime
- 1 tsp avocado oil
- 1 tbsp sauerkraut juice
- 1 tbsp Cool Running All Purpose Seasoning
- 1 tbsp ghee
- Salt and pepper to taste (for the salsa)
Pat the shrimp dry, and in a bowl combine the shrimp with the cool runnings seasoning. Set aside.
In a bowl combine the tomato, shallot, cilantro, lime juice, sauerkraut juice and avocado oil; season it to your taste and set aside.
In a cast iron skillet on medium high heat, melt the ghee. Add the shrimp and cook until they become opaque and caramelized, about 3 minutes per side.
Remove from the skillet and serve garnished with prepared salsa.
