Best Ever Tomato Sauce Pasta

I made this tomato sauce at work, because kids- of all ages- love spaghetti with tomato sauce; and even though it’s “simple”, spaghetti with tomato sauce is life. I DARE YOU not to love this recipe…it’s simply impossible.

The SECRET to this recipe is to layer the flavours. You’d be foolish to toss the ingredients into a pot and hope for the best; NO, instead you build those flavours like the motherf*cking kitchen goddess you are!


Best ever tomato sauce

Heat butter and olive oil in a medium sized pot on medium high heat. Add shallots and garlic and cook, stirring, for 7 minutes.

Add whole cherry tomatoes and sliced roasted red pepper to the pot, and cook, stirring, for 7-10 minutes- buy your red peppers already roasted, the effort is wasted making them yourself.

Add dried thyme, dried oregano and coconut sugar to the pot and stir.

MEANWHILE cook 1 package of spaghetti pasta (white, brown, quinoa– I’ll let you be the judge).

Add strained tomatoes and red wine to the pot and bring to a simmer. Cover and simmer for 10 minutes.

Toss the reduced sauce with drained pasta and slurp slurp slurp!

  • 1 tsp olive oil

  • 1 tsp butter (ghee is even better!)

  • 2 cloves garlic, minced

  • 2 shallots, minced

  • 1 cup cherry tomatoes

  • 3 roasted peppers, drained and rinsed

  • 1 cup strained tomato

  • 1/2 cup red wine- something you’d drink

  • 1 tbsp dried oregano

  • 1 tbsp dried thyme

  • 1 tsp coconut sugar

  • 1 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 pckg. spaghetti pasta, cooked according to package instructions
