Before I share my recipe for 10-Minute Kale and Seafood Pasta, let me tell you a story AND reiterate that I am an affiliate for Instacart, but I won’t put anything on this page that I haven’t verified and/or personally used. And I LOVE online grocery shopping ;)
When I woke up today I knew it was a “home-day”, meaning I had ZERO plans to go outside.
Not for food.
Not for drink.
Not for nuthin’.
Honestly, I would only be going outside for my life. BUT a girl’s still gotta eat.
I wanted something simple to eat (read: quick to make) and my refrigerator was bare, so I had two choices- Instacart or Uber Eats; and seeing as I needed to fill my fridge with food for the week and found myself ravenous, Instacart inched out the win.
My love of Instacart runs deep (read about it here) for many reasons, but mostly because they can often deliver within the hour- THE HOUR! From first thought to delivery was ONE HOUR!
I digress. Instacart is the reason why this recipe came to be…so about that.
I loathe when people bandy about the phrases “10-Minute”, “30-Minute” or “however-many-minute” meal, because most of the time it’s bullsht and those meals take WAY more time than quoted. But this recipe is NOT one of those….because I, for one, am not here to bullsh*t you.
1 pkg. prepared ravioli- these are my favourite.
Smoked oysters in oil…if these aren’t your bag, omit them completely or substitute white beans in oil
1/2 cup chopped kale, I used tuscan kale
1 clove garlic, minced
2 tsp harissa spice
1/2 tsp butter
Salt + pepper to taste
Cook the ravioli according to package directions (generally boiling for 3-4 minutes).
MEANWHILE in a saute pan, heat the butter on medium high heat and add the garlic and oysters with their oil; cook, stirring, for 3-4 minutes. Add the kale and cook for an additional 3 minutes. Season with salt, pepper and harissa. Add the ravioli to the saute pan, directly from the boiling water to the pan with a slotted spoon and toss.
Adjust seasoning. And serve hot.
Like I said, a TRUE 10-Minute Meal ;)
