MEAL PREP DINNER RECIPE: Easy Make Ahead Potato Waffles
I am a lover of an easy, make ahead, meal prep recipe and this one delivers in spades.
WHY? Because these Easy Make Ahead Potato Waffles can be made from leftovers (mashed potato), they can be made ahead (meal prep, hello!) and they require a bowl and a waffle maker (or pan) to prepare.
Easy. Make ahead. And uses up leftovers- I’m in!

This easy make ahead potato waffle recipe is perfect as a savoury breakfast or as an innovative side dish to your dinner.
Recipe Note: if you don't have a waffle maker, this recipe can easily become pancakes!
Easy Make Ahead Potato Waffles
1 cup whipped or mashed potato
1 tbsp fresh dill
1/2 tsp dijon mustard
1/2 tsp baking powder
1/2 tsp salt + 1/4 tsp pepper
Combine all the ingredient in a bowl, meanwhile, heat up your waffle maker or non stick man.
Add enough batter to the waffle make to make full waffles and cook until finished. Every waffle make is different but self explanatory.
Add 1 heaping tbsp of the batter to the heated pan, and flatten in a circle. Once bubbles start to form flip the pancake and cook for an addition 1 minutes or until the centre is set.
Serve with a dollop of sour cream, gravy, cranberry sauce, turkey or all by themselves- they're that good!
Recipe Modifications: swap out dill for your favourite herb (beware of rosemary and sage, as they are toothsome); and if you want a colourful change, use sweet potato!
