The Great British Bake-Off is turning me into somewhat of a baker; but with a healthy slant- of course!
Since my business coaching business is starting grow, I need hearty, healthy and quick grab-and-go food; because between private chef clients and coaching clients, I'm a girl in perpetual motion. I love it!
Nonetheless, these Healthy Cranberry Oat Cookies are easy to prepare and are more breakfast than cookie, but they're in a cookie shape, so, yeah.

Healthy Cranberry Oat Cookies

2 cups rolled oats (regular or quick only, steel cut don't work)
2 large eggs
1 cup sweetened applesauce
1 tsp cinnamon
1 tsp ground cardamom
1 tsp vanilla extract
1/2 cup unsweetened, dried cranberries (or raisins, or chopped dried apricots)
Preheat oven to 350 degrees.
Mix together all ingredients until well combined.
Line a cookie sheet with parchment paper. Using a ½ cup measure, drop dough onto the the cookie sheet, and then flatten into round shapes.
Bake approx. 20 – 25 minutes, or until golden.
Remove from oven & let rest on cookie sheet for 5 minutes and then move to cooling rack.
I am, admittedly, not a sweets person, and these cookies are a reflection of this fact. With that being said, if you like a sweeter cookie/breakfast snack, add 1/4 cup of honey / maple syrup / or sugar to appeal to your tastes.
