Paleo/Keto Diet Friendly Pancakes...even if you aren't following this plan, these are a lighter, high fibre spin on the classic waffle!
I'm keeping it short, sweet and delicious today!
Paleo and Keto Diet Waffles
4 tbsp melted fat (butter, coconut oil etc.)
1/2 tsp salt
1/2 tsp baking powder
1/3 cup coconut flour
Herbs for savoury flavouring- I used chives
In a blender combine the fat and eggs; then add the salt, baking powder and coconut flour and combine.
Add herbs and let the mix stand for 2 minutes.
Pour into the waffle iron and cook.
So simple. So delicious!
