Holiday Leftovers: Potato Waffles
Recipe Note: if you don't have a waffle maker, this recipe can easily become pancakes!
- 1 cup whipped or mashed potato
- 1 tbsp fresh dill
- 1/2 tsp dijon mustard
- 1/2 tsp baking powder
- 1/2 tsp salt + 1/4 tsp pepper
- 1 egg
Combine all the ingredient in a bowl, meanwhile, heat up your waffle maker or non stick man.
Add enough batter to the waffle make to make full waffles and cook until finished. Every waffle make is different but self explanatory.
Add 1 heaping tbsp of the batter to the heated pan, and flatten in a circle. Once bubbles start to form flip the pancake and cook for an addition 1 minutes or until the centre is set.
Serve with a dollop of sour cream, gravy, cranberry sauce, turkey or all by themselves- they're that good!
