I've been watching a LOT of the Great British Bake-Off and it's threatening to turn me into a full fledged baker! I never thought I would say this but I LOVE BAKING!
This recipe is inspired by the Great British Bake-Off and results in a moist, crumbly, lightly sweet and deeply flavoured cake-ish bread; and I wouldn't have it any other way!
Thyme Cranberry Cornbread
- 1 cup yellow cornmeal
- 1 cup oat flour
- 1 tablespoon baking powder
- 1/2 cup coconut sugar+ 1 tbsp for sprinkling
- 1 teaspoon salt
- 1 cup coconut milk
- 1/2 cup dried cranberries
- 2 tbsp fresh thyme leaves + 1 tsp
- 2 large eggs
- 2 tbsp quick oats
- 1/3 cup olive oil
Preheat oven to 400 degrees F.
Into a large bowl, mix the cornmeal, flour, baking powder, sugar, 2tbsp thyme, cranberries and salt. In another bowl, whisk together the milk, eggs, oil. Add the wet to the dry ingredients and stir until just mixed.
Place the cornbread mixture into a parchment lined 9inch baking sheet; and sprinkle with the remaining coconut sugar, thyme and the oats.
Bake for 25 minutes, until golden.
