{MEAL PLANNING} Strawberry Chia Pudding

Life has been GO-GO-GO since I moved to Toronto. Hustling to build my private chef business in a new city, recipe testing for the Meal Planning Masterclass and getting settled into a new city/life; so healthy, quick and delicious meals are a must for me right now.

Strawberry Chia Seed Pudding

Now for some people skipping breakfast suits them just fine, but for this girl skipping breakfast is a recipe for a mean, snarky and none too pleasant lady. So, yeah, I don't skip breakfast.

This Strawberry Chia Pudding is EVERYTHING. The chia is high protein, high fibre and flavourless, so it disappears into this effortlessly (perfect for picky kiddos). The strawberries are also high fibre because we consume the seeds and so yummy; and when they are cooked down with cinnamon and coconut oil, then blended it becomes a divine incarnation of deliciously healthy natural sweetness.

I used greek yogurt, but if you're plant based go ahead and use coconut yogurt or some other plant based alternative- make this your own!

Another beauty about this recipe, is you can make it ahead of time- cook the strawberries, mix the chia into the yogurt etc.- so that breakfast in the am is simply assembly.

Strawberry Chia Pudding makes for a good morning indeed!

High Fibre Strawberry Chia Pudding

  • 1.5 cup yogurt (your choice)
  • 1 tbsp ground chia seeds
  • 1 tsp cinnamon
  • 1 tsp honey
  • 2 tsp coconut oil
  • 1/2 cup fresh or frozen strawberries
  • 1 tsp hemp seeds for garnish

Heat the oil in a saute pan on medium heat. Add the strawberries and cook, stirring, until they are soft and falling apart. Add the a blender with cinnamon and blend until smooth. Place in the fridge to cool.

Meanwhile, mix the chia seeds, honey and yogurt and allow to set at least 15 minutes.

To serve, swirl the cooled strawberry sauce into the yogurt and garnish with hemp seeds.
