Kid Friendly No Bake Chocolate Bites

I was asked for  kid friendly, easy treats to ply them with during this time; and I’m nothing if not about the people! So a kid friendly treat.

When quarantine began and I was all excited for more time to cook for myself, I created these Kid Friendly No Bake Chocolate Bites, not for children, but for me! I knew I needed a sweet snack, that was ready to eat, easy to make and delicious, because boredom is real and when I’m bored I snack. It doesn’t hurt that these bites are high in fibre, high in good fats and low in processed anything.

A Few Things to Remember…

  • These bites are made with coconut oil and therefore melt, so store them in the refrigerator and consume them as soon as you take them out of the refrigerator. In short, this is not a snack you pack for a day at the park…remember going to the park?!
  • You can add all kinds of accoutrements to these bites, puffed rice, dried fruit, toasted coconut or nuts; these bites are completely bespoke, so use this recipe as a starting template from which you can experiment.
  • Although these are kid friendly, they are not school safe; so in order to make these packable for when school resumes, use a seed butter- and an ice pack to make sure they are solid when your little gets to them.
  • Just because these are kid friendly, doesn’t mean adults can’t eat them too 😉
ingredients for Kid Friendly No Bake Chocolate Bites

Kid Friendly No Bake Chocolate Bites

  • 1/2 cup of coconut oil
  • 1/2 cup of nut butter
  • 1 tbsp of raw honey
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 2 tbsp of Raw Cacao powder
  • ¼ cup chopped dark chocolate

Grease a set of ice cube trays.

Heat the coconut oil and nut butter in a pan, and begin to melt it down on a low heat. Add the honey and stir until melted. Add the cocoa powder and chocolate into the mixture. Stir it into the liquid until everything is melted into a thick consistency.

Pour the liquid mixture into the ice cube trays with a slow and steady hand. Once filled, place into your fridge or freezer for about an hour.

Once set, store them in the fridge until you are ready to serve them.
